The most indicative assessment finding is steatorrhea, characterized by bulky, foul-smelling, fatty stools. This directly reflects the primary pathophysiological defect: fat malabsorption due to damaged intestinal villi.
Do not confuse steatorrhea with the bloody, mucoid stools of inflammatory bowel disease or infectious colitis. A diagnosis of celiac disease requires serological testing and a duodenal biopsy while the patient is still consuming gluten.
